SAN GENNARO D.O.C.
This wine is obtained from the grapes which come from a south-facing vineyard just below the medieval
village of San Gennaro. It is a red wine made of the grape varietals of Sangiovese, Canaiolo and Ciliegiolo.
The alcoholic fermentation takes place at a temperature of around 28–30 °C and the contact with the skins
of the grapes lasts for approx. 12–15 days. At the end of this process the wine is transferred in barriques and in small oak barrels where it is kept for approx. 12–14 months. Then blending takes places and the
blend obtained is gently filtered and it is bottled, where it remains for 6 months before being released on the
market.
It is a wine with an intense ruby red colour, with a strong and round body. The bouquet is intense
and lingering, reminiscent of red berry fruits.
Serving Temperature : 16–18 °C – An appropriate decanting is recommended.
Pairings : braised and roasted meats, game, matured cheese.
