Extra Virgin Olive Oil is one of the most prestigious products of the Fattoria di Fubbiano. Due to its unquestionably superior qualities, which make it one of the best oils in Tuscany and indeed Italy, it has received numerous national and international awards and prizes. To mention just one, it was named among the 30 best extra virgin olive oils in the world (Judy Ridgway, The Olive Oil Companion, London, 1997) and, in 1998, the consortium of Tuscan Oil granted it the Certiquality of IGP (Indicazione Geografica Protetta), with a Colline Lucchesi geographical specification - the first and only award of its kind. Our oil is a blend of 90% Frantoio olives with the remaining 10% consisting of Leccino, Moraiolo, Maurino and Pendolino.

All our olives are hand-picked in the traditional Tuscan manner. The oil is extracted by mechanical and physical means only, without the use of chemical substances. Apart from being washed, the olives undergo no other treatment. The oil has the typical characteristics of the Lucca area: the color is golden yellow with shades of green, the taste is fruity, light, slightly, spicy with an intense impression of sweetness. The prevalence of Frantoio olives means that the polyphenol and tocoferol content is good. The average acidity is between 0.1 and 0.2.

One of the best ways to sample Fubbiano extra virgin olive oil is in the classic "bruschetta" ( a slice of lightly toasted Tuscan bread). Otherwise it is perfect with salads, soups and minestrone, boiled fish and grilled meat. Besides, using extra virgin olive oil in the kitchen not only improves the flavour of the food, but is a proven way of contributing to the health of your family and guests.
