

Fattoria di Fubbiano - Extra Virgin Olive Oil DOP Lucca, Tuscany
Extra virgin olive oil is one of the most prestigious products of the Fattoria di Fubbiano. Due to its unquestionably superior qualities, which make it one of the best oils in Tuscany and Italy, it has continuously been recognized and won numerous national and international awards and prizes – for example it was rated best olive oil in the «Fruttato Medio» category by «Le Guide di CUCINA&VINI – L’extravergine 2009»; such as being named among the best extra virgin olive oil in the world (Judy Ridgway, «The Olive Oil Companion», London); winning the «Silver Olive» Prize at the International Olive Oil Awards in Zurich; being mentioned among the most prestigious olive oil of the world by the celebrated German Gourmet Magazine «Der Feinschmecker»; running among the finalist oils at the «Ercole Olivario Award 2008».
Since 2005 our extra virgin olive oil can boast the Protected Denomination of Origin, «LUCCA
D.O.P.», an important certification which is granted by the European Union to guarantee and
safeguard the quality of extra virgin olive oils of Lucca region. The D.O.P. certification represents
an official rewarding recognition to the Fattoria di Fubbiano, after many years of strenuous work
and commitment towards maximum quality. The cultivar (varietals) for our D.O.P. oil are 90 %
Frantoio, the remaining 10 % consisting of Leccino, Moraiolo, Maurino and Pendolino.
The olives are hand-picked when they are still green, approximately 15 days prior to their maturation
time, a device which despite having a penalizing effect on the yield, it ensures a significant
improvement of the organoleptic characteristics of the oil. As soon as the daily hand-picking is
completed, the olive pressing takes place every day, in a modern certified mill, where the oil extracting
processes are carried out with skilled knowledge and great passion under the supervision
of a very enthusiastic manager. Immediate pressing ensures a product of extremely high freshness,
whose flavours and aromas remain unaltered.
Fubbiano D.O.P. extra virgin olive oil has a golden yellow colour with light shades of green, it is
clear and particularly dense. The nose is fresh, pungently and persistently herbaceous with dominating
notes of artichoke, cardoon and almond, combined with precious floral hints, which create a remarkable complexity in its bouquet. It has an abundant flavour, whose powerful and decisive
sensations of bitterness and spiciness are dominated by a perfect harmony, among the expressions
of a very remarkable complexity in vegetable reminiscences, together with long lasting impressions
of soft aromatic notes.
The Fattoria di Fubbiano produces also two mono-varietal (monocultivar) Frantoio (100 %) extra virgin olive oils : a pitted extra virgin olive oil «Denocciolato», and a special selection named «Golden Drop».
One of the best ways of appreciating Fubbiano extra virgin olive oils is on the classic «bruschetta» (a slice of lightly grilled Tuscan bread), or «in pinzimonio» (dip of fresh vegetables). It is ideal also served as a dressing with salads, or with soups, tasty fish dishes and grilled meats. Using extra virgin olive oil every day in the kitchen, certainly improves and enhances the flavour of any food, but it is also a proven way of contributing to the health of your family and guests.
